This tea from Hangzhou is one of the well-preserved treasures in China – it has even been “knighted” as the Emperor’s tea by Emperor Quianlong. Tea is grown throughout the province, but the finest come from the Tiemu Mountains. Long Jing is picked during Spring, just before the rain starts pouring. The leaves are long and flat. The tea itself is yellow and tender with a very nice and soft taste. Profile: Long Jing of an exquisite quality, with light green, flat leaves. The shape of the leaves is due to the fact that they go through a pan roasting as part of the treatment process. The bouquet is incredibly nuanced with vegetal notes and flavors of fruit, flower and roasted nut. Recommended preparation: 80°C water / 6 g. per liter water (should be brewed with spring water for the best results). Time: 5 minutes.
