This China Oolong comes from the northern part of the Fuijan province. Among the Chinese, it is called Ti Kuan Yin, the tea of the Merciful Gods. According to the Chinese, this tea cleanses one’s soul of the sins one has committed. Chinese Oolong teas are oxidized between 5 – 30%, the more the tea is oxidized, the darker it becomes. This Oolong is slightly more oxidized (about 30%) than the organic China Oolong (about 15%), therefore this Oolong has a fuller taste. Profile: China Oolong is a beautiful quality, with rolled leaves that unfold in the cup. This tea has a soft and round bouquet that is slightly spiced with notes of hay, rounded off with a slight sweetness. Recommended preparation: 100°C water/6 g. per liter water. Time: 6 minutes
